Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 cup sour cream
- 1 teaspoon vanilla extract
For the topping:
- 1/2 cup all-purpose flour
- 1/2 cup packed light brown sugar
- 1 teaspoon ground cinnamon
- 4 tablespoons unsalted butter, chilled and cut into small pieces
Instructions:
- Preheat the oven to 350°F (180°C). Grease a 9-inch square baking pan or a 9-inch round cake pan with cooking spray or butter.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large bowl, beat the softened butter and sugar together until light and fluffy, about 2-3 minutes.
- Beat in the eggs, one at a time, until well combined.
- Add the sour cream and vanilla extract to the butter mixture and stir until smooth.
- Gradually add the flour mixture to the butter mixture and stir until just combined.
- In a small bowl, combine the flour, brown sugar, and cinnamon for the topping. Add the chilled butter and use a pastry cutter or fork to cut the butter into the mixture until it resembles coarse crumbs.
- Spread half of the cake batter into the prepared baking pan. Sprinkle half of the topping mixture over the batter. Repeat with the remaining batter and topping mixture.
- Bake the coffee cake for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Cool the coffee cake in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- Serve the coffee cake warm or at room temperature.
