Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract

For the topping:

  • 1/2 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1 teaspoon ground cinnamon
  • 4 tablespoons unsalted butter, chilled and cut into small pieces

Instructions:

  1. Preheat the oven to 350°F (180°C). Grease a 9-inch square baking pan or a 9-inch round cake pan with cooking spray or butter.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat the softened butter and sugar together until light and fluffy, about 2-3 minutes.
  4. Beat in the eggs, one at a time, until well combined.
  5. Add the sour cream and vanilla extract to the butter mixture and stir until smooth.
  6. Gradually add the flour mixture to the butter mixture and stir until just combined.
  7. In a small bowl, combine the flour, brown sugar, and cinnamon for the topping. Add the chilled butter and use a pastry cutter or fork to cut the butter into the mixture until it resembles coarse crumbs.
  8. Spread half of the cake batter into the prepared baking pan. Sprinkle half of the topping mixture over the batter. Repeat with the remaining batter and topping mixture.
  9. Bake the coffee cake for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  10. Cool the coffee cake in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  11. Serve the coffee cake warm or at room temperature.
