Naturais, which is Brazilian Portuguese for natural and the preferred method of preparing coffee in Brazil, refers to the bean preparation we prefer. To dry the beans from the skin to the sweet pulp and seeds, it takes a lot of sunlight. This can be done on well-tended patios where whole cherries are raked constantly, or on trees where some of the pickings are left on the branch.
Our favorite coffee farms also use the “pulped naturally” method. This involves removing some of the pulp and skin from the beginning. The “washed”, which completely removes the skin, is what we recommend in countries like Costa Rica. We find Brazilian coffees, which are lower in altitude and have less acidity, to be somewhat bland.
