Vegan Tunacado sandwich

Vegan Tunacado sandwich

Using plant-based tuna, this sandwich is filled with onion, garlic, vegan mayo, Dijon mustard, Sriracha, and parsley. Spread pesto on one side of the panini bread and vegan butter on the other, add the ‘tuna’ filling, tomato, and avocado for a delightful lunch.

Ingredients:

  • 1 can of plant-based tuna
  • 1 small red onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp vegan mayonnaise
  • 1 tsp Dijon mustard
  • 1 tsp Sriracha sauce (optional)
  • 1 tbsp fresh parsley, chopped
  • 4 slices of panini bread
  • 2 tbsp vegan butter
  • 2 tbsp vegan pesto
  • 1 ripe tomato, sliced
  • 1 ripe avocado, sliced

Instructions:

  1. Prepare the Tuna Filling:
    • In a medium bowl, combine the plant-based tuna, chopped red onion, minced garlic, vegan mayonnaise, Dijon mustard, Sriracha sauce (if using), and chopped parsley. Mix well until all ingredients are thoroughly combined.
  2. Prepare the Bread:
    • Spread vegan butter on one side of each slice of panini bread.
    • Spread vegan pesto on the opposite side of each slice of panini bread.
  3. Assemble the Sandwich:
    • Place two slices of bread, buttered side down, on a clean surface.
    • Evenly distribute the ‘tuna’ filling on top of the pesto side of the bread slices.
    • Layer with slices of tomato and avocado.
  4. Top the Sandwich:
    • Place the remaining slices of bread on top of the filling, pesto side down, to form two sandwiches.
  5. Grill the Sandwich:
    • Heat a panini press or a skillet over medium heat.
    • Place the sandwiches in the press or skillet and cook until the bread is golden brown and crispy, and the filling is warmed through, about 3-5 minutes per side if using a skillet.
  6. Serve:
    • Remove the sandwiches from the heat and let them cool for a minute before slicing in half.
    • Serve immediately and enjoy your Vegan Tunacado!

Tips:

  • For an extra flavor boost, add a sprinkle of nutritional yeast to the tuna mixture.
  • Pair with a fresh salad or some sweet potato fries for a complete meal.
