Ingredients:

  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (15 oz) vegan tomato pasta sauce
  • 1 cup vegetable broth
  • 2 cups baby spinach
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Cooked white rice or toasted pita bread (for serving)

Instructions:

  1. Prep the Ingredients:
    • Finely chop the onion.
    • Mince the garlic.
    • Drain and rinse the chickpeas.
