Vegan Bacon and Cheese Toastie

This vegan bacon, cheese, and chicken toasted sandwich from No Meat Disco is incredibly easy to make. In less than 15 minutes, you can have a gooey, satisfying meal. Simply fry your vegan chicken and bacon, add plant-based cheese, and grill on sourdough bread for a delightful toastie.

Vegan Bacon and Cheese Toastie

Ingredients:

  • 4 slices of sourdough bread
  • 4 slices of vegan bacon
  • 2 vegan chicken fillets or strips
  • 4 slices of plant-based cheese
  • 2 tbsp vegan butter or margarine
  • Optional: mustard, vegan mayo, or your favorite condiments

Instructions:

  1. Prepare the Ingredients:
    • Heat a skillet over medium heat and add a bit of oil.
    • Fry the vegan bacon slices until crispy, about 3-4 minutes per side. Remove from the skillet and set aside.
    • In the same skillet, cook the vegan chicken fillets or strips until golden brown and heated through, about 4-5 minutes per side. Remove from the skillet and set aside.
  2. Assemble the Sandwich:
    • Spread a thin layer of vegan butter on one side of each slice of sourdough bread.
    • Place two slices of bread, buttered side down, on a clean surface. Layer with vegan cheese, cooked vegan bacon, and vegan chicken. Add any optional condiments if desired.
    • Top with the remaining slices of bread, buttered side up.
  3. Grill the Sandwich:
    • Heat a skillet or panini press over medium heat.
    • Place the assembled sandwiches in the skillet or press, and cook until the bread is golden brown and the cheese is melted, about 3-4 minutes per side. Press down slightly with a spatula for an even grill if using a skillet.
  4. Serve:
    • Remove the toasties from the skillet and let cool for a minute before slicing in half.
