- 1 can (15 oz) chickpeas, drained and rinsed

- 1/4 cup finely chopped celery
- 1/4 cup finely chopped pickles or relish
- 2 tablespoons mayonnaise or vegan mayo

- 1 tablespoon lemon juice
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 4 slices of whole-grain bread
- Lettuce leaves
- Tomato slices
- Avocado slices (optional)
Instructions:
- Prepare Chickpeas:
- In a medium-sized bowl, use a fork or potato masher to mash the chickpeas until they are mostly broken down but still have some texture.
- Mix Ingredients:
- Add the red onion, celery, pickles or relish, mayonnaise, Dijon mustard, lemon juice, garlic powder, salt, and pepper to the mashed chickpeas. Mix well until all ingredients are evenly combined.
- Assemble Sandwich:
- Toast the bread slices if desired.
- Spread the mashed chickpea mixture onto two slices of bread.
- Top with lettuce leaves, tomato slices, and avocado slices if using.
- Place the remaining slices of bread on top to complete the sandwiches.
