Mashed Chickpea Sandwich

Ingredients:

  • 1 can (15 oz) chickpeas, drained and rinsed

  • 1 tablespoon Dijon mustard

  • Tomato slices
  • Avocado slices (optional)

Instructions:

  1. Prepare Chickpeas:
    • In a medium-sized bowl, use a fork or potato masher to mash the chickpeas until they are mostly broken down but still have some texture.
  2. Mix Ingredients:
    • Add the red onion, celery, pickles or relish, mayonnaise, Dijon mustard, lemon juice, garlic powder, salt, and pepper to the mashed chickpeas. Mix well until all ingredients are evenly combined.
  3. Assemble Sandwich:
    • Toast the bread slices if desired.
    • Spread the mashed chickpea mixture onto two slices of bread.
    • Top with lettuce leaves, tomato slices, and avocado slices if using.
    • Place the remaining slices of bread on top to complete the sandwiches.
  4. Serve:
